Mom's Enchiladas
Brown hamburger (you can also roast a roast in the oven for an hour and use instead or as well)
Add meat to following sauce:
2 cans enchilada sauce
2 can stewed tomatoes
2 can tomato sauce
1 can tomato & green chilles (I very rarely add)
1 large bottle salsa
2 cubes beef boulion
1/2 tsp. mexican seasoning
1/4 tsp. red pepper flakes
1 tlbs. brown sugar
Check sauce for taste you can either spice it up or tone it down by adding cut up slices of potatoes.
Sauce can cook as long as you want it. The longer, the spicer.
Tortillas (double for a crowd)
1. c flour
2 c. corn meal
1 tsp. salt
1 egg
2 tlbs. oil
2 1/2 - 3 c. milk (batter should be fairly thin)
pam spray frying pans
Use 1/3 c. batter per tortilla
Store cooked tortillas in crockpot with paper towel on bottom and every 3 or 4 tortillas and on top until ready to serve.
